Grass and Forest Foraged Icelandic Lamb.
The Rough Forage lambs are dam raised and move freely throughout their lives, drinking rich milk, grazing on lush grass pastures and freely foraging in the woods. They are supplemented with kelp and minerals and are not fed or finished with grain - the flock is completely grass and forage fed. Icelandic lamb is very mild, tender, and fine textured, and is widely considered a gourmet meat. The average hanging weight is 35-40 lbs. per lamb, and I sell professionally butchered, state inspected cuts. Occasionally I have whole and half lambs available per request. Icelandic lamb contains a high proportion of Omega-3 fatty acids and iron, which contribute to its delicate flavor and overall nutrient density. The distinctive, place based taste of Rough Forage lamb is a result of the diverse diet of wild woodland plants and pasture grasses that they selectively graze and browse and the freedom of movement that they enjoy throughout their life cycles.
